Barbecue
Its the usual routine for me, told the wife I wanted a bbq tomorrow, she immediately complained about having to have people over and make salads etc.

I keep trying to explain to her that its just grilling some meat over some hot coals and its NOT a party. Any of you have this ridiculousness?

Barbecue has to be COAL, if you want gas, use your cooker.

Has to be sausages first, because the fat from the sausies makes the coals burn better. Chicken and fish has to be last and wrapped in foil for the first half hour. When the coals have died down, time to chuck some bananas in their skins on.

I recently reverted back to coal from gas last month.... We had 11 around my place, I don't think you can have a BBQ without inviting someone around for a beer and burger.

in Cyprus forget about charcoal you can just use wood.

Personally I don't beleive you can beat dice lamb and thick cut slices of Helim (Halloumi) cheese with a finely diced tomatoe, Cucumber and corriander salad.

It's been 6 years now and I've done my time. My counselling sessions have made a real difference and they are letting me handle Bbqs again as a starting point.

Marinate the chicken say 20 pieces breast leg etc with 2 tablespoon olive oil three cloves crushed Garlic two tablespoon Tom puree and a covering of salt over the chicken, mix together with hand making sure it is all covered in the paste, and put in fridge for 12 or so hours.

Bloody lovely.

you're conflating BBQ and grilling. A proper pig pickin usually requires a hot box and anywhere from 8-12 hours to slow-cook the pork. BBQ sauce is all based on preference, but Texas and Carolina are the most popular. If I'm having pulled pork, I prefer carolina, but if it's ribs then it's texas.

At my house, I just use a propane infra-red grill because I typically don't have a half a day to throw away, and it's the next best thing for me. If you haven't had BBQ in the southeastern US then you ain't had proper BBQ. we have an obesity epidemic to prove it.
